- Voted #3 Latin Cuisine Chef in the world in 2002 by Latin Chefs of the Caribbean magazine.
- Chef for the Miami Dolphins, Florida Marlins and Florida Panthers stadium from 2002-2004
- Worked in 22 countries and is a master of 60 types of cuisines from around the world.
Carlos is a US Army Veteran, and a TM meditator since August 2012

To support this auction, Carlos is willing to travel anywhere in South Florida, as far north as Vero Beach and south to the Keys. 50% of the winning auction bid will support TM scholarships in Broward County, and the remaining 50% will support scholarships in the location of the bidder's local TM center.
